Are you looking for a go-to Sunday morning breakfast muffin recipe? This brown sugar blueberry muffin recipe is perfect for a leisurely weekend breakfast, or even weekday breakfasts on the go.  The brown sugar streusel topping takes this muffin to the next level.

Brown Sugar Blueberry MuffinsIngredients:

Muffins –

2 1/4 cup all purpose flour

1 1/4 cup light brown sugar

3/4 tsp salt

3 tsp baking powder

1/2 cup canola oil

1/2 whole milk

2 large eggs

1 cup blueberries (thawed or fresh)

Streusel Topping –

4 T all purpose flour

4 T light brown sugar

3 T butter at room temperature

1/4 tsp cinnamon

Directions:

Preheat your oven to 350 degrees.

Grease the muffin pan or use individual liners.

If your blueberries are frozen, set them aside to than for 30 minutes to an hour.

Streusel Topping – Combine the butter, flour, brown sugar and cinnamon until you have small clumps. Mix it with a fork and then clump it with your fingers.

Muffin Recipe – Combine the flour, brown sugar, salt and baking powder until there are no brown sugar lumps

Add in the oil, milk and egg and mix them all in

The batter will be thick

Add in the blueberries and mix until they are just combined

Fill the muffin cups about 3/4 full

Cover the entire top of the batter in each muffin cup with the streusel topping

Bake at 350 degrees for about 25-30 minutes

    Looks delicious Kristen! I love muffins with a light streusel topping. And I have a bag of blueberries in the freezer that needs to get used up….I bet you I could make these gluten free and they would still be fabulous. Thanks for the inspiration.
