As a mom who works out of the home, I am constantly looking for ways to save time and energy. One of my best frugal, time saving tips is to double (or triple) your cookie recipes and freeze some for later. And you don’t need to freeze the cookies after they are made, because you can freeze the cookie dough. When you bake them off in the oven, they taste just as good as the day you made the first batch.
How to Make Freezer Cookie Balls
There are a few ways to freeze your cookie dough. My husband likes to freeze them in logs wrapped in plastic wrap. This works fine too, but it’s an extra step that I am just too lazy to take honestly.
Although the log technique does work very well for sugar cookies. If you freeze sugar cookie dough in a log, you would take out the frozen log and just slice it on a cookie sheet while it is frozen. It is a quick process, but it’s just that one extra step that I don’t need.
What I like to do is freeze my cookies in little balls. You can do that by making your cookie dough first. For the recipe I made here, I just doubled my White Chocolate Chip Craisin Cookies. Using a large spoon, I would take some cookie dough and roll it into a ball in my hands. I placed the cookie dough on a room temperature, parchment paper lined baking sheet.
After I made as many cookie balls as I needed, I placed the baking sheet in the freezer. Let the cookies freeze completely solid, for a few hours. After they are frozen, take them off the baking sheet and place them in a large Ziploc bag. Store the cookies in the freezer until you need them.
Here comes the best part – make as many or as few cookies as you want. If you want one fresh-baked cookie after the kids go to bed, just take one out of the freezer and bake it in the oven. You can bake the cookie ball from frozen – no need to thaw. It may need a few more minutes to bake, but other than that, no other changes from the original recipe. I usually set the timer for the regular baking time and then keep checking every 30 seconds to a minute.
You don’t have to make a whole batch of cookies anymore when you really only want one cookie. You save time, money, energy, and calories – because you don’t eat three if you really only wanted one cookie.
