I wish I was the kind of mom who got everything ready the night before – the school lunches, setting out clothes, school papers ready to go. BUT I’m just not. I’m lucky if I get the coffee pot ready to go the night before. I have my priorities! So sometimes the mornings before preschool can get a bit hectic. That’s why I love this easy preschool lunch idea – ham and cheese roll ups.

Preschool summer school is ending and the new school year is about to start. It’s such an exciting time for my daughter. We headed out to Safeway and picked up the ingredients for the ham and cheese roll ups – only 3 ingredients, so simple. Safeway has an electronic coupon program called Just4U which I love. Before having kids I got into couponing in a big way because I love saving money and I hate spending more than I have to. But I just don’t have the time for paper coupons anymore. Safeway makes it easy to save with their Just4U program. You can head over there and sign up to save $0.75 on any ONE (1) Hillshire Farm Naturals® Black Forest Ham or Honey Roasted Ham with the digital coupon available through the Just4U online portal. Expires 8/9/15. (While Supplies Last).

Ingredients:

6 inch fajita flour tortillas

Shredded cheese

Hillshire Farm Naturals Honey Roasted Ham

Directions:

Making the ham and cheese roll up is super simple. Lay a tortilla out on a plate. You can use larger or smaller flour tortillas, but these 6 inch ones are the perfect size to slice in half for my preschoolers lunch. Mom and Dad might want 2 or 3 though.

Place a slice of Hillshire Farm Naturals Honey Roasted Ham on top of the tortilla and sprinkle some shredded cheese on top. Microwave for 15-30 seconds, just until the cheese starts to melt. Roll up the tortilla while it is still warm. BE CAREFUL – it will be HOT.

Slice in half and place in a baggy in their lunch box. You can add some chips and fruit to round out their lunch. You can serve the roll up warm or cold. I would recommend including a lunch box ice pack to keep everything healthy.

One of the reasons I choose Hillshire Farm Naturals is because the lunch meat comes in a resealable plastic container. Genius! I wish more foods I bought at the store came in their own resealable containers, it would make my life a lot simpler.

They also have a “Love it or We’ll Eat it” campaign where they will give a sandwich to someone in need if you “Love it” and if you don’t love it, they will give you your money back. My daughter asks for these ham and cheese roll ups for breakfast, lunch, dinner and snack now – she definitely loves it!

    Great idea Kristen. I’ll be spending the week with my daughters preschoolers while they go on an anniversary long weekend. I’ll have to make this for them. Bet they’ll love it.

    easy and delicious! Plus I love that my kids can actually help make their own lunch (which always means they will eat it all since they eat what they make!!). Love it!
